I freeze the chantrelle juice and use it as a stock .

I’m south of you and I’m so sick of rain…..then I am thankful. One side of my yard is full of these, and now I know why my neighbor was getting them. Is there a point when I should not pick one, thanks for the info. Fun fact, I bought my first of your books at Priester’s on the way to Petals from the Past. God Bless

golden rule...remove moisture than add moisture.

You are supposed to cook out all of the water of the Chanterelles before you would sautee them with anything else.

I dont recomend anyone do anything in this video....chanterelles do not need any more moisture. Dry saute until all water is evaporated, then all fat.

There is no way wet chanterelles cook better. And these are way too large.
