Cretan whole grain bulgur with leek sausages

Well a simple, but satisfying dish.
Bulgur wheat is one of my Fav.
It’s similar tasting to brown rice, but cooks faster.
You can compinate it with vegetables,meat and cheese.
Also you can make it a tasty salad.
Cretan whole grain bulgur with leek sausages
1 cup (200gr) whole grain bulgur
1/2 cup Vermicelli
2 greek sausages with leeks
800ml vegetables broth
1 tsp salt
Black pepper
1/2 cup tomatoes fresh
1 brown onion thinely chopped
4 Tbsp olive oil
Method
Place a nonstick pan over medium to high heat.
Add 2 Tbsp olive oil and the onion.
Stir continuoulsy and sauté for at least 2-3 minutes until it becomes nice and golden brown. Add the Vermicelli sauté until becomes golden brown.When ready, remove from pan.
Add 2 Tbsp olive oil and the greek sausages with leeks.
Sauté until golden brown that will give a rich nutty flavor which it will bring out all its taste.
Add the tomatoes,stir for few minutes. Then add the vegetable broth,salt pepper and let it boil.
Add the whole grain bulgur.
Cover and let it boil in low heat until it remains little sauce in it.
Then add the vermicelli and onion thst you keep in a plate.
Cover and set aside for 10 minutes until the bulgur soaks up all of the liquid.
Serve with Tzatziki sauce,tomatinia and feta cheese.
Sprinkle it with thyme.
Enjoy
