1 set your multimeter to diode or continuity.
2 place the positive lead on the source and negative on drain. it should indicate open circuit.
3 with your finger touch the gate and source at the same time.
4 the mosfet should conduct and beep or ondicate forward bias.

what has happened is that your finger conducted enough current to power the gate.
That is how you test a mosfet out of citcuit.

Sometimes the gate is defective. You only show if drain and source is good.

sometimes the gate activation threshold is lower than what the multimeter can provide. If we switch to continuity mode and charge or discharge the gate with the leads, the drink and source will become fully conductive and the multimeter will beep on those two terminal in either direction.
