Y'know the funny thing is, Inosuke had been trying to provoke him all the time, especially at dinner or several conversations. But this scene, when the man really really gets angry. He shudders at the sight.

My take on this scene is that inosuke is so intact with his animal senses, he has like a 6th sense to him and immediately recognizes the burning hate and intentions of tanjiro in this moment. Animals are only able to sense danger/safety, which is why they possess the ability to immediately switch from fight or flight mode in reality. Human's can't do this, but since inosuke is so intact with that animal instinct it allows him to sense danger - he know's how dangerous tanjiro can really be and immediately freezes in his tracks.

Inosuke's learning a lot about social cues from Tanjiro. It's palpable to see and very good writing.

and Inosuke was able to sense Tanjiro's anger the most, not only because he was in close proximity but also because of his animal instincts telling him not to agitate Tanjiro any further...

I've learnt from tanjiro, Just dont piss off a good guy, if a person is secretly having trouble in their background but still being a gentle person, they're holding it in, if you piss them off, all of that rage and wrath will hit you at once and you prob. Won't have 2 arms anymore.
