When making broth for soup with a chicken or turkey carcass, cut up the bones with kitchen shears into 1-2 inch pieces once they have softened. This releases the marrow from the bones and makes the broth a bit velvety. Also, add a three inch piece of ginger which you’ve pounded with a mallet or rolling pin ( a hammer with work too) and add it to the water.
