Ate Famous Dave's ribs for dinner tonight and they were amazing, as always. Love this place.

Come on man, you know why you're not taking the membrane off--you don't have the time in a restaurant. It takes a minute to take the membrane off (maybe two if you're new to it). So if you're doing two racks of ribs for your party, take the two minutes to take the membrane off; if you're working at a restaurant and doing 10 racks every hour (prep for 10x8 hours), of course don't waste the time.

Keeping the membrane on is a bad idea it's so tough and chewy and takes away from the experience
