Sunny's Fortified Queso

Yield: 10 to 12 servings
Ingredients
1 pound spicy Italian sausage, meat removed from the casings
1 teaspoon ground cumin
1 white onion, finely chopped
1 red bell pepper, finely chopped
Two 4.5-ounce cans chopped green chiles
2 pounds processed block cheese, cut into cubes to melt faster
2 scallions, finely chopped
1/4 cup finely chopped fresh cilantro, optional
Chips, for serving
Directions
Special equipment: a slow cooker
In a slow cooker with a browning function or a large pan on medium heat, add the sausage. Break up into bits and cook until browned, 7 to 9 minutes. Add the cumin, onions and red bell pepper. Cook until tender, then add to the slow cooker if cooking in a separate pan. Add the green chiles to the slow cooker along with the cheese and turn the heat to low. Stir intermittently until fully melted, about 45 minutes. Serve topped with the scallions, cilantro, if using, and an assortment of chips.
