Home Cooking Sessions: Steak and Eggs with breakfast potatoes and chimichurri - breakfast of champions! Full recipe below! 👇🏽

1. Dry brine your steak! I covered this beautiful bone-in sirloin from @mr_txuleta with sea salt, then left in the fridge, uncovered for 48h, patting dry and flipping every 12h
2. Remove steak from fridge 2h before cooking
3. Prep your chimichurri - I always eyeball this: finely chop a bunch of parsley, oregano, red chilli, green chilli, chive, garlic, shallot + zest of 1 lemon
4. Add to a bowl with sea salt, black pepp, a good glug of olive oil, splash of red wine vinegar + juice of a lemon. I used a lovely EV olive oil from @tenuta_sanguido with rose vinegar from @nomaprojects
5. Mix to combine, adjust to taste and set aside to infuse
6. Peel your potatoes and dice into cubes, then throw into salted boiling water for ~4 mins until slightly softened. Drain and allow to steam dry
7. Add some beef fat to a cold pan and bring up to high heat, add in your steak fat side down if it has a big enough fat cap and sear for 2 mins
8. Lay steak flat and press down to form an even crust ~2.5 mins, then flip, lower heat and add in some @allthingsbutter__ + any aromatics
9. Baste continuously until butter is foaming and it smells incredible, then remove and throw into a 110-120c oven until internal hits 120-125f
10. Add your dried potatoes into same pan on med-high, season, then add in some thyme and red chilli - cook till golden and crisp
11. Remove the potatoes and leave in oven, then add a little olive oil to same pan and crack in your quail eggs to fry - i love these little things sunny side up!
12. Remove steak from oven and slice up after a quick rest, then plate with your potatoes and eggs. Spoon over the chimichurri and garnish with fresh chives
