Slow & Cozy Christmas in English Countryside | Decorating for Christmas | Baking & Vintage Ornaments

Cozy and peaceful time at home making old fashioned Christmas ornaments, drying orange slices, baking chocolate cupcakes & decorating home for Christmas. This year I will be having a truly slow and peaceful festive time.

Chocolate Tangerine cupcakes
140g plain flour
100g sugar
20g unsweetened cacao powder
Pinch of salt
1 tsp of baking powder
1/2 tsp of baking soda
1 egg
50g olive oil or any oil of your choice (not butter)
120g milk
5g vinegar (I used white wine vinegar, but any kind will work)
50ml coffee
50g dark melted chocolate (70-85%)

Sift dry ingredients through a sieve. Whisk together sugar and egg, add olive oil and whisk again. The liquid will emulsify. Add vinegar to milk to make buttermilk.
Pour wet ingredients into dry, including coffee and melted chocolate. Combine well. The batter will be slightly runny, but quite viscous. It should stretch slightly when you pour it. If it runs too fast, you might need to add bit more flour. (My cupcake liners are 5oz and I had enough batter for 6 big cupcakes).
Bake for 20-25 minutes at 180C/ 350F
Let the cupcakes cool completely before frosting.

Buttercream ingredients:
175g room temp butter
70g sugar
1 tangerine juice + zest
1/2 tsp of cinnamon
pinch of salt

Additional tangerine syrup:
Juice of 1 tangerine
1 tbsp of sugar

Whisk together room temp butter and sugar until soft and creamy. Add juice and zest of 1 tangerine, cinnamon and salt. Whisk well together.
Make tangerine syrup by combining tangerine juice and sugar.

Once your cupcakes have cooled down brush them with tangerine syrup.
Add buttercream to the piping bag and chill for 10 mins in the fridge. Frost your cupcakes and add any decoration you like :)
