Wow! I came for the potatoes (and bought your book!) and now all these other great tips and tricks are popping up ... now i'll look to see if you've got a recipe for meatballs 'cause so far the Swedish Chef makes the best ones! 😃

P.S. The potato book is great, i keep it close at hand and plan to work my way though it this winter ... 👍

Great info. 🙏 Question: I have ARFID and IBS (I’m autistic) and cannot do carrots or bell peppers. Is there anything else I can use in the mirepoix other than carrots (or other than bell peppers for holy trinity)?
