My friend is 78 yrs old from Italy & showed me this I've been doing it for years but in vegetable oil & it's been great as long as it's totally covered in oil it's good! 👍👍👍

Maybe I’m missing something, but I’ve been taught that leaving raw, low-acidic foods in oil deprives them of oxygen and can result in botulinum toxicity. Not something I would try for garlic I wasn’t ready to use immediately.

Thankyou so much for that. I saw a video on YouTube a couple months ago, this man said if you dont boil both garlic and olive oil it can develop botulism.

This garlic and olive oil looks yummy, but I agree with the fact that this is a DANGEROUS thing to do as the lack of oxygen in this mixture, the low acidity, and the spores that could be present on the garlic can cause botulism to grow. This is a fact, and I learned this in a ServeSafe course I took when working in the food industry. I am concerned that someone will watch this video and follow it and be in danger!!!

I figured that would work.
After growing garlic this year I peeled a bunch, tied them up in several cheesecloth 'bags', and smoked them for a couple hours. They are amazing, but I wanted to know if I could do this. Now I know. Thanks chef!

How long will the garlic oil last on the counter? I have a bunch of garlic that I grew in my garden. I want to preserve it in oil and given as gifts and Christmas. Just wondering if I do this process now will it last until Christmas?

It can be stored in oil, but you must raise the acidity first. You cant just store it in oil on its own.
Sea salt, vinegar and oil work. Or do what people have been doing for over a thousand years and pickle it in salt and vinegar.

Im wondering if this "chef" has a food handler's license. This was improperly done. The garlic should have been put into vinegar for 2 days first then dried and put into oil and refrigerated. After 2 hours in a hot kitchen that oil isn't safe anymore.

If you want to preserve garlic, Dehydrate it! If you want fuse garlic in oil, do so only for a week in fridge and then toss it away. You can also freeze garlic with a little vinegar and lemon juice but use immediately. This video is wrong and you are at risk of death from botulism poisoning.

Sure maybe it's safe within a week but most people don't preserve things to be used within a week.

A little more information would have been helpful. Primarily how long can you store garlic like that? And does putting it in the refrigerator extend the shelf life of the garlic?

that would be me...I wasted 30.00 in oil and 20.00 in garlic..I became concerned when the garlic began to bubble and then the oil went sour. BAD IDEA

2018 September. I placed peeled fresh garlic in "white vinegar" as suggested on two videos. After two days the garlic has a bluish color. Next, I cover the gloves with Oil. Is it safe to use the bluish tinted garlic...anyone? Thank you, Chef-wannabee-Bruschetta. Baja Ca. Mx.
