Easy Chopped Detox Salad Recipe

This Easy Chopped Detox Salad is packed with veggies is a great make ahead lunch or light dinner.

HELPFUL KITCHEN TOOLS:

Chopped Detox Salad Recipe

1 bunch of broccoli (about 2 cups chopped)
1/3 large head of cauliflower (about 2 cups chopped)
1/2 small head red cabbage (about 2 cups chopped)
4 kale leaves, stems (about 2 cups chopped)
3 carrots, peeled (about 1 cup chopped)
1/2 cup parsley
1/3 cup roasted almonds, roughly chopped
1/4 cup dried cranberries, roughly chopped
2 tbsp. sunflower seeds

2 cloves crushed garlic
1 tbsp. grated ginger (about 1 inch)
1/2 cup lemon juice
1 tsp. dijon mustard
1 tsp. honey
1/4 cup extra virgin olive oil
Salt and pepper to taste

Roughly chop all the veggies into bite size pieces.

Place each veggie into the food processor and pulse until you have chopped the veggies nice and fine. They should look like crumbs and you will definitely have to do this in batches. Fine chop the parsley as well.

Transfer the veggies into a big bowl and add in the almonds, sunflower seeds, and dried cranberries.

In a separate bowl combine the garlic, ginger, lemon juice, dijon mustard, honey, extra virgin olive oil, salt, and pepper.

Drizzle the dressing over the salad and toss everything together. Serve and enjoy!

I was truly disturbed by the fact that nothing taste like it did when I was a child. Watching your video about clean eating set me on a mission. Made this this weekend. It’s delicious. I had it for lunch with a little piece of roast chicken and ate it with brown rice for dinner. This is going to be a staple for sure!

This is an incredible salad! I love it. When I make it I leave out the mustard and add cilantro instead. I also change out the lemon for line. So great!

I have been enjoying this salad all week. Today, I was craving something sweet so I added a yellow delicious apple, diced, and dressed the salad with olive oil and balsamic vinegar. I love satisfying cravings with healthy foods!

I am in LOVE! This salad is PHENOMENAL! It meets every taste bud’s needs and my tummy is wonderfully satisfied. I made it for the first time today. I made this a couple of months ago and Love, Love, Love it!! For those who have bloating issues, I use Beano as well. It really helps. It's time to make it again!! I just finished the Green Immunity Boosting Chicken Veggie Soup for lunch today (with cilantro). DeeeeLicious!!

I made this and LOVED it! It does make a lot so besides eating it straight I got some lavish bread from T.Js and used avocado, turkey, cheese, onion, a few extra cranberries and a a bunch of this salad. The flavors went together perfectly! Thank you.

I made this yesterday, thank you!  Makes a TON!  My husband and I both had it for lunch.  I'd say make a triple batch of the dressing so it can last a while in the fridge. i'll be making this dressing again.

I am late on this one. I made this for my good prep for the week and did as you suggested and did not dress it. It is a big salad for one person so I stated thinking other ways I could use it. I used the salad as a base for fried rice.. It was delicious!! Thank you Dani..
