Thank you for this. Is it common or possible for someone who's tested positive for alpha gal allergy to initially not react much to meat/dairy/etc, but spontaenously or over a period of time (weeks, months, years) develop physical symptoms of the allergy?

Am currently very concerned about someone who's newly diagnosed, swears they're fine (ahem, despite an uptick in asthma 🙄) and is determined to continue to consume mammal products "in moderation" (eg, still carry on as usual - a burger, ham, or ribs here and there; cheese, milk, butter daily..). I understand the psychological factors at play, but it's quite frustrating.

My 8 year old son was extremely allergic to all red meat from 1 until he was 6 or 7. Pork, lamb, beef, and venison. IgE levels of 25, 21, 8, and 5. But he didn't have alpha gal syndrome which was really surprising to our allergist. A year or 2 ago his beef and pork dropped to 0 and he eats them just fine and his lamb and venison did significantly drop but are still quite high. I think something like igE of 6 and 3.5. There are lots of mammalian enzymes added to cheeses and dressings it's in so much. It's very difficult. Years ago before my son outgrew the pork and beef allergies, be was touched by his cousin who had cheese dorito fingers (they use pork enzymes) and he went into anaphylaxis. His entire eye swelled shut, his lips and he developed hives all over. Even after 1 epi pen he wasn't looking that great. Needed steroids and more benadryl at the hospital.
