This works... If you have no competition.
Two restaurants one next to the other, one has a queue and the other doesn't. You really want to go to the one with the queue, but you are also hungry. There's a limit to how much you're willing to wait before your hunger takes the other restaurant.

I dont know if its just me but if i have to wait a long time, especially months for a place, i just say screw it, im never going there.

Restaurants have a queue to stagger the food as it comes out. Even if they’re empty it doesn’t make sense to sit everyone down at the same time. Small business can use the queue method to get more time whilst driving demand

This only works if you are truly worth the wait and your first interactions are faster than everyone else's. First contact is very important. If you can have first contact you can ask for more time and more money.

Do you still put them in a queue if it's kinda a big break for you? Like do you still tell them to wait a week or should you show them that you're willing to jump through hoops?

No restaurant does that. Those tables are reserved ahead of time for customers who planned ahead. They may be empty right now, but they will not be within the time frame it would have taken you to complete your meal

Thanks to nuggets Schumacher for his comment. I just asked for a quote in two survey companies. One took a week to respond. Guess who I went with, the one who responded faster because I needed the job done. You can’t try create scarcity if you have competition. If companies provide similar service the one that can get me the job sooner is the one that has more value due to it’s timeliness.

Not necessarily.. sometimes there's not enough staffing to serve u, that's why restaurants don't seat u immediately. If u wait 10m at the door, u can't complain. Once you're seat, u expect service.

Give customer a long enough wait and they'll take their business elsewhere.

This only works when your customers do not otherwise have a preference between you and your competitors, and the wait is short enough. A 3-week or even 9-month wait for a random lunch? Sure, your customer will eat next door now, and good luck is they still remember your queue thing 1 hour after their lunch.

I see the point but generally disagree, in my industry any “wait” and the customer just calls my next two competitors. This would work for B2C but I question in a B2B situation.
