Hi. Vet tech/current vet student here. What you're witnessing is a seizure, not dehydration. Seizures can be caused by a lot of things. MBD (metabolic bone disease) is the thing I'd consider first. His diet should be rich in calcium and he should have access to proper UVB light. Another possibility is toxins in or around the tank. Is there any tannin rich wood in there? Are you using any sort of chemicals in the room he's in? Like sprays or air fresheners or anything like that? Has anything changed when he had his first seizure?
It could also be because of stress. You're trying to tame him, which is a good thing, but too much stress could cause an overload and possible neurological symptoms, such as a seizure. It could also be genetic and have nothing to do with your husbandry. I am not very knowledgable in beardie morphs but I know several morphs in other lizards as well as snakes that have a great risk of developing neurological problems (the enigma syndrome in leopard geckos and the spider ball python problem are two that comes to mind).
The problem is I'm just sitting here behind a screen, I can only speculate from what I know from the years of work I've done and what I've been taught in school. If these problems continue, please see a vet. I know there are several good ones here in Sweden who specialise in reptiles.

Young bearded dragons are especially prone to seizures when they have low calcium or other vitamin and mineral deficiencies. Make sure to get him to a vet.

I would panic and cry if my beardie ever seized like this.
Had him since he was the size of my pinky and now he’s 18 inches long and five years old. Such an active and happy guy, seeing another one like this is so so sad.

Poor little guy. Looks like he's in so much pain. Hope he's all better now. Looks like he's comin around. Seems alot happier at the end.

This looks like a seizure to me. Assess diet, setup, reduce stressors and contact an exotics/reptile veterinarian. Show them this video and go to an appointment prepared with the answers to the above and show them this video. It is always best to seek advice and have any tests and investigations done when our beloved animals start showing abnormal behaviour. The cause of any worrisome changes should always be examined. It’s better to be safe and to do our absolute best by the animals in our care.

Distressing video, thanks for posting and I understand being afraid of getting attacked for posting something like this, its not because you're a bad person the beardy is having a reaction to something. Hopefully once you follow the suggestions from the vet students here he will recover.

Glad to know he’s doing better!!
One of my beardies had seizures and it looked a lot like that. He ended up paralyzing himself so my husband had to.. do the deed 😔 im so glad yours hasn’t come to that!! Just keep him hydrated and loved and im sure he’ll be fine 🤗

*i think it’s important to note, these younger ones could’ve been born with a parasite and the symptoms are usually diarrhea and seizures then they die. But he looks like he’s doing much better so I doubt that’s the cause

Be careful when giving them water. They have a valve in their throat that acts as a shut-off mechanism so they don't gulp too much at once. If you disturb them while or immediately after drinking, it could startle them, causing the valve to flood and drown them. Hope this info helps and I hope the little scaly angel pulls through.
