A Supercooled liquid is in an unstable state. This occurs when heat is removed from a liquid so rapidly (beer in freezer) that the molecules do not have sufficient time to assume the ordered structure of a solid.

It is a process called supercooling. The beer is below its freezing point, but is not frozen(I forgot why). When he bumps it, it undergoes rapid freezing (I forgot why) because it is under its freezing point anyway, but somehow needs the bump to start the freezing process.

@decmasta You put a beer in the freezer. Alcohol has a lower freezing point than water, so it doesn't freeze. Remove from freezer and bang on counter. When you do so, it sets of a chain reaction similar to a drink fizzing up. Instead of fizzing, it starts freezing solid. Cool party trick if you ask me.

we used to do this with water in iraq, our mini fridge cooled the water to just the right temp so when you tapped it on the counter after taking it out it would instantly turn into slush/ice

Ice needs a nucleation point, either impurity, or compression wave will do it, hence it freezes when banged on the table.

I did this tonight. Run hot water over the surface and then swirl it around Howard Hamlin style. Pour it a perfectly ice cold beer. Worked for me.😎🍻

@TheRealrocker74 It still hits its freezing point. It's just that there arnt any imperfections for the drink to crystalise around. Hitting the bottle or opening it shifts the drink around enough to create an imperfection and start the freezing process.

Totally just accidentally did this with a Corona. Froze in my mouth and in the bottle as I drank it.

Had this happen so many times and wasted the beer. The fridge had cold spots in it where almost without fail supercooled my drinks. Pull one out on a hot day thinking I get a refreshing beer, only it to freeze once I opened it.

Seem to happen really easy with beer, never had water or any other liquids do this. I think it's at least partly to do with the beer being pressurized as in all cased it only froze as soon as the pressure was released.

@GrandHighGamer I don’t think it has anything to do with imperfections. Freezing point is not a function of temperature, but function of temperature and pressure.
IMHO, since beer is under larger pressure than atmospheric, it needs lower temperature to freeze. After you shake it, some of the light molecules fly away, also removing portion of kinetic energy from liquid. Then water molecules loose velocity enough to form hydrogen bonds.

@Riverboy1986 A Bottle Corona costs around 1, 20€ (which is roughly 1, 56CAD) here in Germany, which is about triple or double the price of good german beer. But whether it's disgusting or not is matter of taste.
