I'm brewing my first ever hard cider, an unpasteurized fresh pressed with 1 cup of brown sugar/gallon, using AC-4 right now! I'm doing a low-and-slow at a constant 58 degrees F and just hit the 3 week mark. I'm aiming for 1.00 but as of 1.5 weeks ago still had 70% of my OG left so I'm not expecting to finish until 2-3 weeks from now. I plan on adding a stick of cinnamon and a few whole cloves and allspice when I rack to my secondary. My hope is that I'll wind up with something just a touch spicy and reminiscent of the fall when I finish, before fining and kegging it for carbonation.
