Short video on how to make Pineapple Gojju! :)

Recipe:
Ingredients:
Pineapple - 1 Cup Finely Chopped And Boiled
Oil - 2 Tbsps Overall
Cumin Seeds - 1/4 Tbsp
Urad Dal - 1/2 Tbsp
Chana Dal - 1/2 Tbsp
Methi Seeds - 1/8 Tbsp
Coriander Seeds - 1/2 Tbsp
Dry Red Chillies - 5-6 (Byadgi)
Sesame Seeds - 1/2 Tbsp
Dry Coconut Pieces Or Fresh Coconut - 2 Tbsps
Water - As Required
Mustard Seeds - 1/4 Tbsp
Curry Leaves - 2 Tbsps
Tamarind Extract - 1/2 Tbsp
Jaggery - 1 Tbsp Or According To The Sweetness Of Pineapple
Salt - As Per Taste

Preparation Method:
1. Add 1/2 tbsp oil in a pan over low-medium heat and fry cumin seeds, urad dal, chana dal, methi seeds, coriander seeds until aromatic.
2. Now add dry red chilies, sesame seeds, and fry until they turn golden-brown and crispy.
3. Now add dry coconut pieces or fresh coconut until and fry for few seconds. Turn off the flame and let all the ingredients cool down.
4. Then grind the fried ingredients into a smooth paste by adding water as needed.
5. Heat oil in the same pan over medium heat. Add mustard seeds and let them splutter.
6. Add curry leaves and sauté until crisp.
7. Now add finely chopped and boiled pineapple to the pan. Stir and cook for about 2-3 minutes.
8. Now add the ground paste to the pineapple and mix well.
9. Add tamarind extract, jaggery(adjust to taste), and salt.
10. Mix everything thoroughly and simmer for about 10 minutes until the gojju thickens slightly. Adjust consistency with water if needed. Serve hot with rice or as a side dish.
This pineapple gojju is tangy, sweet, and spicy, making it a delightful accompaniment to South Indian meals! :)

Peanuts 20g
Oil 1 tsp
Roast for 2 mins(low flame)
Curry leaves( few)
Saute till urad dal turns golden yellow
Put the cooled mixture to blender
Add roasted sesame seeds and
Grated fresh Coconut
Blend into a paste
Meanwhile make the cooked Pineapple pieces to boil in a simmer along with required jaggery chunks.
Mix the blended mixture onto the boiled pineapple, add seasoning.
