The Chemex is a classic and elegant brewing device designed by the German chemist, Peter J. Schlumbohm. It may seem like a device that was born out of the third wave brewing movement, but it has been in production since 1941. Schlumbohm is the owner of more than 3000 patents due to his numerous inventions, but the Chemex and the water kettle are one the most famous.
Steps for Brewing with Chemex :
1. Prepare 90-95 degrees Celcius by bringing it to a boil and letting it sit for 30 seconds.
2. Insert the Chemex filter into the brewer. Make sure the 3-layered side of the filter is lined up with the pouring spout.
3. Pre-heat the filter with hot water for 5 seconds, then discard the rinse water.
4. Weigh 20 grams of beans and grind it to medium to coarse.
5. Pour ground coffee into the filter and gently shake the brewer to settle the grounds.
6. Start the timer and slowly pour about 70 grams of water over the grounds to wet them evenly. Let it bloom for 45 seconds.
7. Pour continuously in a spiraling pattern, until the timer reads 2:45 or the scale reads 300 grams.
8. Allow all the water to drain through the filter. Total brewing time should be about 3 to 4 minutes.
9. And then serve.
The Chemex brews coffee using the infusion method, which makes it most similar to drip coffee in terms of body and taste. Chemex filters are 20-30% thicker than those used by other pour over methods. The result is a slower brew and a richer cup of coffee. Although not as rich as the french press, the Chemex does produce a sediment free cup of coffee that will impress anyone used to the weaker taste of most auto-drip coffee machines.
