👨‍🍳 INGREDIENTS

Custard
- 300 ml Heavy / Thickened Cream Alternative is Whipping cream)
- 2 shots Espresso coffee use instant coffee as alternative
- 3 pcs Gelatin leaves follow packet instructions for qty needed

Caramel Sauce
- 1/2 cup Sugar
- 1/4 cup Heavy / Thickened Cream
- 2 tbsp Butter
- 1/2 tsp salt (optional, transform it to Salted Caramel Sauce)

INSTRUCTIONS

1. In a container, soak the 3 gelatin leaves in water.
2. In a saucepan, add the cream and coffee over low heat, stirring continuously.
3. As you see foamy bubbles forming on the side and the cream thickening slightly, and when you scrape the bottom of the pan, you will feel a bubbly movement. Turn off the heat just before it boils.
4. Remove the gelatin leaves from water, squeeze out the excess water, and add them to the cream mixture. Continue stirring until the gelatin dissolves completely.
5. Pour the mixture into glasses or molds, cover with cling wrap or aluminium foil then chill for 4 hours or overnight.
6. Add Caramel sauce, chopped chocolate for toppings and serve.

Caramel Sauce
1. On a sauce pan, add the sugar and the tbps of water.
2. When you see a little bit of golden yellow colour on the sauce, Turn off the heat, it will still cook and becomes darker.
3. Allow to cool down for 2 minutes then add the Thick cream continue stirring as the sauce is so hot, it will bubble and boil. Add the butter and stir. You can add 1/2 tsp of salt too if you want it to be a salted caramel.
