Welcome back to another of our cook & wine review videos. Today I cook a traditional Cypriot meal of Kolokasi with pork. Kolokasi is tropical plant known asTaro and their corms are used as vegetables. I braise the Kolokasi with pork, onions, celery & tomato sauce to make this delicious traditional Cypriot meal.
We pair this with Chianti Classico Riserva 2017 Ricasoli. this red wine comes from the Tuscany region in Italy it is a blend of 90% Sangiovese and the other 10% is Cabernet Sauvignon & Merlot. It is 13.5%abv & has a natural cork.
After fermentation the wine is matured in oak barrels for 18 months & then a further 6months in the bottle. The wine is ready for drinking now but will last at least another 5 years.
The winery was founded in the 12th century and is one of the oldest wine estates in the world, and is still owned by the same family!

Ingredients

1.5 kg pork
1.2 - 1.5 kg Kolokasi
2 medium onions
4 sticks of celery
s&p to taste
2 veg or chicken stock cubes
200 ml passata
1tblsp tomato paste
2 tbsp chopped parsley
3-4 tbl sp olive oil

This is great information. Well beyond my scope. But fun to follow along. My request is I am an hors d’oeuvre person. I love sipping on a beautiful wine and having some gorgeous hors d’oeuvres that really equal a meal and that’s all I need. Can Rico make that happen for me?

Hi Andri and Rico, thanks for showing the photo; you share so much of your life, I thought it only fair that you see what I look like!
Gerry (hubby) wants to know what the taro tastes like - does it have a flavour of its own (like parsnip), or does it take on the flavour of the other ingredients? Also, your channel is becoming a bit interactive Andri - when you said something like "I need more juice so I can dip my bread it, " Gerry said right away, "I thought you were keto!" 😊 Anyhoo, yet another lovely dish, well explained Rico. And by the way, I have to give Gerry the credit for making our chicken parmesan, and it was delicious! xxx
