I was like 9 or ten years old when this movie came out. I remember watching him grab a handful of gold coins and slowly start dropping them back in while talking. I thought it was suspicious and figured that he, the pirate, stole a piece of the gold in that scene

So, I didn’t catch that my first time watching the movie, and even then, I was still thinking “he must have kept one of the coins when was making his point about killing the Brits outside the caves. Even when I was half paying attention, I still understood what happened because it would be in Jack’s character to do something like this… and also because he never turned into a skeleton when he was illuminated by moonlight during the scene of the cursed crew of the Black Pearl mocking Jack for his predicament.

Jack LITERALLY reveals hes holding the coin when the skeleton form is revealed

He runs it along his fingers for christ sakes, makes a big show of it

That and the fact that even without the reverse coin slippage, the scene in question focuses on will staring at Jack's hand and wondering what his plans is

The palming played out so well, I remember rewatching this movie so many times as a kid trying to find every little detail. Then again I was a weird kid

He doesn't even need to keep it though. He just has to take it from the chest and that is how it's stated in the movie, if I recall correctly. The curse "starts" when the first person takes gold from the chest. It stays intact until all gold is returned to the chest and everyone who is under the curse at that moment has repaid the blood debt. Will had the last piece and was the last one to owe the debt (on account of his father) when the crew came back to the Isla de Muerta. When Jack takes the gold from the chest, he also falls under the curse, meaning that he now also owes the blood debt. So even if he doesn't keep the gold and drops it right back into the chest, he is still under the curse until Will returns his coin to the chest and both Will and Jack repay the blood debt. It's also why Jack (the monkey) "stays" cursed. After all debts are settled, he steals another coin from the chest, cursing himself and starting the cycle all over.

This is all explained in the movie, either implicitly or explicitly. If you watch it with an intact brain, this is not hard to understand at all.

When I first saw it, I didn't see him palm the coin. But I knew he was messing with them earlier and was like, "WOW, he was so sneaky even the camera couldn't see it!"

In the jail when one of pirates grabs him by the neck, he didn't turn into bones but the pirate grabbing him did

It's obvious he wasn't curse. The prison scene in the beginning he was in moonlight and dealt with the cursed pirate. Also he always ran from immediate danger
