Diorite being 6 on the Mohs scale means they could grind and polish it with: basically any quartz crystal, marble, granite, or quartzite.
I also doubt your dates presented, and I imagine they didn't use copper, but bronze.

This is a perfect example of why we try to get our modern processes into written and reproducible forms instead of relying on "word of mouth" knowledge passed down from person to person.
While it produced many fine craftspersons, and arguably some of the finest pieces of artwork, if you remove the person from the equation, then you also lose the process.

This problem has probably happened several times in the history of mankind, in which we've spent much time in figuring out how it was done, only to lose that knowledge again in events like wars, earthquakes and volcanic eruptions.

As my wise grandmother liked to say: "we grow so soon old, and so late smart".

These pots are vertically lathed. As a potters wheel is somewhat an additive lathe it seems likely the idea for a subtractive verticals late with Diamond or sapphire bits would probably do it. These pots are from the old kingdom where nobody know anything about the tools.

If ancient people were only allowed to use wood and copper to carve stone, they would not have been able to make anything out of stone. Luckily, they used stone masonry tools and techniques.
