Chicken w/ Broccoli & Sweet Potato 🍗🥦🍠

A quick and easy dinner using my air fryer and stove top! Lately I’ve been trying to create healthy, flavorful, affordable, and efficient recipes. Now that I’m working quite a bit, I am trying to balance my passion for cooking and working out. Everything I cooked here cost $8 for two large servings (45g protein per serving).
Hope you enjoy!
Ingredients:
-1lb ground chicken
-3 cups broccoli florets
-2 cups diced sweet potato
-salt and pepper to taste
-2 tsp onion powder
-2 tsp garlic powder
-2 tsp smoked paprika
-oil for cooking
Lemon Tahini Dressing:
-1/3 cup olive oil
-2 tbs tahini
-2 tbs apple cider vinegar
-1 tbs honey
-juice of half a lemon
-pinch of salt and pepper
Instructions:
-add the broccoli and sweet potato into a bowl, lightly drizzle with oil, and season with salt and pepper; mix well
-air fry for 20-25 minutes until tender and crisp
-heat a nonstick pan on medium heat and add 2 tbs oil
-cook ground chicken until fully cooked and no longer pink; season with salt, pepper, onion and garlic powder, and smoked paprika
-make lemon tahini dressing in a small bowl
-plate the dish and drizzle with dressing
-enjoy!
