It is so easy to make your own deli meat using ground pork, chicken or beef.
There are no nitrates or fillers in these.

You can even ground your own meat to control the fat content in it

Ingredients for this recipe:
2lbs of ground pork, chicken or turkey
1 1/2 tsp black pepper
2 tsp of salt
1-2 tsp of rosemary (whatever herbs you want)

I find that fascinating. I stopped buying lunch meat years and years ago. Too much crap in it. But this is doable.

For those of you who don't have a ham press, a simple baking pan would suffice. Make sure you press it solid. Put a weight on top of you want to be sure. Use a steamer instead. It won't be as hard as a ham press but it will do for a starter.

A "Trivet" (like in the bottom of a stovetop pressure cooker) on the bottom of your pot will keep the temperature more even & prevent overlooking the bottom of your meat press.

Im a carnuvore and never use sugar in my homemade deli meats so I was glad you dint put sugars in tbis. But addi g grass-fed beef gelatin makes this MUCH BETTER in texture. I use that same ham press and it is cheap and easy.

My ham pressed gets delivered Monday and I can’t wait. I am in love with the cracked pepper turkey breast from OM but it has too much additives. If you have a recipe that would be great. If not I’m going to wing it. I ain’t scared. Lol

**Hints for Preparing Meat:**

1. To preserve the color, use curing salt in a 50/50 ratio with regular salt and marinade it for a couple of days in a fridge.
2. Grind your own meat instead of using pre-ground options from the store. When grinding, split the meat into two halves. Keep one half in larger pieces, and thoroughly grind the other half while adding iced water.
3. Thoroughly mix it. I'd use a planetary mixer.

Perfect, I just did a comment of some more on who put all the chemicals and sugars and crap in his home made lunch meat ... I do it like you do but dont leave it over night I let it stand for an hour after packing then cook it to 160. Love the video!
