This is bullshit. Brown sugar is sugar and molasses. You’re talking about Demerara sugar or raw sugar.

my friend has a cookbook from the 1800s and it says that you make Brown sugar with molasses it seems like it's been that way for a while.

I feel like you're referring to "raw" sugar which is also brown. But "brown sugar" as we know it in north America is molasses and sugar

There are many kinds of sugars that are brown. None of them are actually called brown sugar. Brown sugar in the United States has always had molasses in it as a natural flavoring. Light brown sugar has less molasses. Turbinado cane sugar or Demarara sugar is a less refined sugar that keeps it's light brown color and crunchy crystal structure without the addition of molasses as a flavoring

In fact, you can make your own brown sugar … just combine white granulated sugar with molasses. If you use raw sugar (the “brown” sugar he’s talking about), it won’t even measure correctly as packaged brown sugar is meant to be pressed firmly into your measurement tool.

Brown sugar is sugar that has been finely processed with the molasses ADDED BACK IN. The molasses came from the sugar. And whether the processed sugar comes from beats or cane really doesn't matter. They both taste good.

Cane sugar is like a brownish yellowish color, but it is NOT sold as brown sugar. Cane sugar is cane sugar, sometimes labeled raw sugar or sugar cane. Brown sugar is sugar and molasses. What kind of sugar with the molasses depends on who ever makes it.

Sorry bro, yer wrong. The definition of brown sugar is refined sugar (yes I would prefer cane sugar), with some measure of molasses added back in. Molasses is a by product of sugar refining both from cane sugar and beet sugar. It came from the sugar cane or from the sugar beet. Raw sugar is probably what you are talking about, not only does it have molasses in it, but it also has almost all of the other sugar byproducts left in due to a reduced amount of refinement. You cannot get this product anywhere in modern times unless you can find a craft sugar mill.

thats how i make brown sugar at home. i use white sugar mix molasses and i use it as brown sugar in baking.

The only “brown” sugar I’ve seen that he may be talking about is golden sugar which is less process and raw sugar which is the same idea. Brown sugar has molasses…that’s what makes it brown…

Raw cane sugar is labeled as such in the US. Usually like demerara or turbinado. The department of agriculture has the requirements of sugar classification and light and brown sugar have molasses. Cane sugar is not the same as brown sugar though

"Brown Sugar" is sugar and molasses, any baker will tell you that.

Raw cane sugar just happens to also have a brown tint to it.
