'Greek Cretan Dakos Salad'

This is one easy and quick salad.
Cretan dakos is a vegetarian salad!
Great recipe for the summer days, served with a cold glass of rosé.

Greek Cretan dakos Salad

4 round barley rusk
3 tomatoes
1 Tbsp white vinegar
2 tsp granulated sugar
1 pinch salt
Black pepper
3 Tbsp basil finely chopped
1 small Red onion finely chopped
300g feta cheese chopped into small cubes

To serve

8-10 small cherry tomatoes chopped into quarters lengthwise
Capers
Black olives
Olive oil
Black pepper
Dry thyme
Dry basil

Method
Place the 4 pieces of the dako onto big Platter with crust facing down.
Grate 2 tomatoes into a bowl and cut the other one into small cubes.
Add to a bowl the grated tomato, the sugar, vinegar, salt, pepper, basil and mix well.
Pour this mixture with the grated tomato over the dako. This helps dako to soften.
Top with the tomato cubes, the finely chopped red onion, cherry tomatoes,black olives, capers and the feta cheese.
Sprinkle with basil, thyme and black pepper.
Drizlle it with olive oil and served!
