As an orchardist kid I’ll explain the browning. That’s the starch content. As apples ripen the starch convert to sugars. The ripest apples take the longest to brown. As most produce is picked under ripe to ship better. They are often at some stage of less than perfectly ripe.

If you try this again, i would sat get a peeler/corer/cutter that peels cores and cuts the apples into a spiral for making dried apples, then you'll only get the apple meat and likely better infusion
