FYI, the crab used in California Rolls is this imitation stuff. This is why it's usually the cheapest sushi option. You get what you pay for.

According to the package about 3% crab meat and mostly a mixture of whatever types of fish is left over after the good cuts, salt, water, and maybe a preservative or two. It’s basically the hotdog of the seafood world.

Imitation crab meat is inexpensive, taste great and in a salad with lettuce, tomato, grn onion, avocado, hard boiled egg and my wife's home made dressing is a treat for me to eat. BTW; the quality of taste and texture varies by brand

Some people develop shellfish allergies randomly, like I did one day when eating shrimp, same thing happened to my sister, we can no longer have shrimp/lobster/crab, so having the imitation stuff as an option is pretty nifty

I love this. It doesn't taste or look anything like real crab, but it is still very delicious and is not as mushy as crabmeat. I like it in chunks in stir fries, in soup with ramen noodles and shredded and mixed with mayonnaise and lemon juice in a sandwich.

In England, when I was younger. they were called crab sticks; last decade they've been called seafood sticks! They're considered longlife chill items at UK superkarkets, I.e same delivery as cheese and yoghurt etc...

It isn't bad in a salad and take it from a crab fisherman, it's a bunch easier to use then the real thing. I made real crab stuffed mushrooms for Xmas. I took the meat out of three crabs. What a pain in the ass. I finally got good at it but for things like salads or hors-d'oeuvres I will simply buy canned crab meat.
