The basic definitions are that a gun can be elevated from 0 to 45 degrees, a mortar from 45 to 90 degrees, and a howitzer from 0 to 90 degrees.

The jump from 1914-1918 to 2014-2018 is quite significant from Artillery starting out and growing to computers/robots and self loading machines having 2-4xs the distance and accuracy and different shell types too all in 100 years
(Or how the first tanks had artillery cannons on it to be used as fire power to deal with any foes)

Mortars are still used today, and can range up to 9km+

They're great for firing over obstacles, whether it's hills, dense foliage, or buildings, or into or out of built up defensive positions that would protect from direct fire weapons

Definition change over the years, in modern context, it more or less the following:
Mortar are portable explosive weapon that can be carry by infantry and have a small crew operating it (3-4 soldier), meamt to lob shell over a moderate distance to provide fire support for other infantry.
Field gun while no longer common, are semi-portable (can be push around, still require truck/horse to drawn them over long distance). They basically a cannon, they are mostly to fire at bunker, entrench enemy position, enemy infantry. It can be use like a mortar/howitzer to fire in a arch but can also be use to fire directly. It slowly evolved and move to the role of anti tank gun in ww2 while it infantry-support job was being taken by mortar.
Howitzer are long range artillery use to provide artillery support from far away, it require vehicle to drawn it. Artillery are typically a separated unit from the infantry, either attach to a infantry unit or it own brigade.

Originally guns (mostly) fired solid shot whilst Mortars and Howitzers fired explosive shells. Howitzers were a later addition and were basically short barrelled mortars mounted on wheeled carriages whilst conventional mortars had flat based mountings for firing off platforms.
Mortars and Howitzers were mostly used for fortress or siege work until better fuzing made their ability to air burst more reliable.

And the gun howitzer is what the modern field artellery piece is, technically. Because only really lightweight mobile guns can survive being unarmored, so heavier guns that lack strong indirect fire capability are obsolescent. Hence, gun howitzers, generally just called "guns" or "cannons, " and recoilless rifles, which are light enough to tow on jeeps, or light trucks. Or, in some cases, carry and fire from the shoulder.
