You gotta do the 5 block height on staircases.
It takes way longer to begin with, but in the long run it's much faster.

There are two paths after this. You mine higher every time, or you don’t use stairs ever again.
Edit: Or slabs. Dig 2 x then 1 y. Looks cool but takes a bit of time.
