Making My Subway Order Better

Recipes:
Sub Sandwich Bread:
(I got the recipe from TheChainBaker)
- 2 1/2 Cups AP Flour (300g)
- 1 tsp Salt (6g)
- 1 Tbsp Unsalted Softened Butter (25g)
- 1 Egg
- 2 Tbsp White Sugar (25g)
- 1 1/2 Tsp Instant Yeast (6g)
- 1/2 Cup Cold Milk (130g)
Dough Glaze:
- 1 Egg Yolk
- 1 Tsp Milk
1. Add everything except AP Flour into a large bowl and combine
2. Once combined add AP Flour and mix into a shaggy ball
3. Place the ball onto a clean work surface and knead until smooth, about 6 minutes
4. Place the dough ball into a large bowl, and lightly grease with oil, then cover for 90 minutes
5. Then stretch and fold the dough to strengthen the gluten and cover for 90 minutes
6. Divide into two equal pieces, about 270g each, and flatten into rectangles
7. Roll those rectangles into a tight log and pinch close, then cover for 60-90 minutes
8. Preheat oven to 325*F
9. Glaze dough and optional top with sesame seeds
10. Bake for 18-20 minutes until beautifly golden
Balsamic Marinated Chicken:
- 1 to 1.5 lbs Raw Chicken Thighs (450-675)
- 3 Tbsp Oil (40g)
- 3 Tbsp GOOD Balsamic Vinegar (45g)
- 1 Tbsp Honey (15g)
- 1 Tbsp Hot Mustard (15g)
- 1 Tsp Each Dried Oregano, Dried Basil, Garlic Powder, Onion Powder, and Salt
- 1/2 Tsp Black Pepper
- 1/2 Tsp MSG
- Juice from 1/2 Large Lemon (about 15g)
1. Add everything to a bowl and marinade for 1-24 hours
2. When ready, remove chicken from marinade and dry before cooking
