We had a small pack of lean ground beef which isn’t ideal for burgers so I thought let’s kick it up a notch both with fat and flavour so we are blending in bacon 🥓 it was sooooo good, wasn’t as overpowering as I thought, still good beef flavour, the thin edges were giving major crisp bacon energy, nice little smoky flavour 10/10 must try 🔥

PREPARATION
Slice and dice all vegetable first so they are ready to dress the burgers before contaminate the board with meat. Finely mince bacon into a ground beef consistency equal parts. I opted to chop the beef in and bacon together to further mince and my warm hands aren’t ideal. Formed into balls I did 1/2 of a cup (I did 1/3 it felt small so I did 1/2)

COOK
Medium-High heat in a 15’ stainless steel pan. Oil the pan with a light amount of Wagyu tallow - the bacon will release a lot of fat. Balls into the pan, using a piece of parchment to avoid sticking and citrus juicer bottom to smash thin - I don’t have metal spatulas 😂 *no seasoning the bacon is salty* adding some thin onions and letting the meat cook until they’re almost cooked through. Flipped, for half the time and topped with cheese.

NOTES
We did quick thousand island dressing as the burger sauce 🤷🏻‍♂️

Weird how people go back to the poor days of making smash burgers and now theyre a modern cool thing 😂 im not sure people realise they're reinventing something from the past
