Buckwheat “Blini” (Mini Russian Pancake) Ingredients:
100g buckwheat
60g AP flour
300g Whole Milk, warmed (110F)
5g instant yeast
1.5g salt (½ tsp)
15g (1 tbsp) butter
2 eggs, seperated

Blini Technique:
1 Mix flours, salt and yeast. Warm milk. Slowly pour warmed milk in dry ingredients and mix until a smooth batter forms then let rest for 30 min.
2 Whisk in yolks and melted butter.
3 Whisk egg whites to stiff peaks, fold into batter until all mixed in and can’t see eggwhite. Let stand for 5-10 mins.
4 Brush butter in pan, dollop small amount of batter into butter and cook blini over medium heat with butter. Once bubbles come up around rims from pancakes, flip. Make small “silver dollar pancake sized” blini.
