Sam: here's a basic dipping sauce that's really good:

• Grate some garlic on a Microplane ribbon grater; this gives just the right texture without reducing the garlic to mush, and has a lot of surface area. Alternatively, just slice the garlic super thin, but IMHO the ribbon grater works best.
• Add brown sugar at about the same volume of the garlic; the brown sugar adds a nice touch of sweetness with a bit more character than white sugar, while balancing out the pungent raw garlic.
• Add soy sauce,
• Add Chinkiang vinegar (fragrant black vinegar)
• Add a few drops of toasted sesame oil
• Add a few drops of fish sauce

This whole list should come out to about 1/4 cup of sauce.
Try this and see how you like it.

Mexican Lasagna (Can you make)
Ingredients:
2lbs ground beef
28oz can Tomato sauce
1 can Diced tomatoes and green chillies
1 can red kidney beans
1 7.8oz can sliced olives
1 onion diced small
1 large bell pepper diced small
1 1/2c mushrooms diced. Optional
1 Lrg bag Mexican blend cheese
1/3c Taco seasoning split
4- 12" flour Tortillas (2 cut in half)

Directions:
Cook ground beef and add half of taco seasoning. Combine all other ingredients except tortillas and cheese in large bowl with remaining seasoning.

Layer ingredients in 9x13 pan. Start with mixture then cheese and then tortillas (one whole and 2 halves to create layer). Repeat and finish with mixture layer and cheese. Bake in 350° oven for 25-30min.

Interesting treatment. I would be tempted to add more flavor by seasoning the slurry...a bit of garlic and onion powder perhaps? I know, the wontons/dumplings have flavor, and the dipping sauce does too. But just flour and water for the skirt?

When you make them scratch you dust them with extra flour/starch to keep them from sticking. If you cook them the same way and just add water the extra starch on the outside will do the same thing you did with your slurry; great shortcut for a frozen bag.

Donair (Canadian east-coast specialty)

Donair Meat:
2 pounds medium ground beef
3 cloves minced garlic
½ cup all-purpose flour
4 tsp sweet paprika
3 tsp dried oregano
2 tsp salt
2 tsp onion powder
1 tsp pepper
¾ tsp cayenne pepper

Sweet garlic sauce:
1 can sweetened condensed milk
3/4 tsp garlic powder
1/4 cup white vinegar

Additional ingredients:
Pita bread (warmed)
Finely diced white onion
Diced tomato

For the meat, mix all spices together and, using your hands, blend with the ground beef and minced garlic. Form into a loaf pan (like you would meatloaf) and cook at 300 degrees for about 2 hours. Cool. Slice thin and heat on the flat-top when ready to eat.

To make the sweet garlic sauce, mix all ingredients until thickened. Easiest way is to add everything into a jar, close the lid, and shake until it forms a thick sauce.

Wrap the hot, sliced beef in the warm pita. Top with the finely diced white onion, diced tomato and the sweet garlic sauce.

Lose the skirt and make Chicken Parm Cremera Pizza.
Pizza Crust
Tomato Sauce
Alfredo Sauce
Diced Grilled Chicken
Mozzarella Cheese
Parmesan Cheese
Bacon Crumbles
Roasted Garlic
Ricotta Cheese
Red Pepper Flakes
Italian Seasoning
The way I do it is tomato sauce on the crust then Alfredo sauce on top of that diced grilled chicken, Mozzarella, Parmesan, crispy bacon crumbles, and chopped roasted garlic. I like to add red pepper flakes, dollops of ricotta, and Italian seasoning.

I’m in! Those look delicious!! I used to buy some from potstickers that came in a tray with the watery mixture already on them. You just plopped the whole thing onto your pan and they came out just like yours! Never thought of doing my own like this, but they were sooo good. The extra crispy bits are the best part!

Cute! I wonder if adding flavoring to the flour mix would mess up the skirt/kilt if you don't add too much. Perhaps a bit of roasted garlic powder. Or powdered ginger.

Sam I would definitely love to see you make some fish egg rolls and some fish ragoons!! I have been making both every time I go out and catch me some fish crappies!!! I’m always looking for new was to fix my fish and this is definitely by far my new favorite way to fix me up some fresh crappies for sure!! I’ve been doing it almost all summer long and every weekend!!! You definitely should give it a try because I promise you won’t be pissed about it for sure!!! Awesome video!!!

In my opinion, the steamed ones with the see-through blouse of dough, that end up with the bit of charr on the bottom with a chrispy skirt.... Those are my preferred textures for pot stickers. Also, I prefer them flat on the back 😂
