If you place underlayment over the eave trim but over the existing underlayment, doesn’t that mean water will get under the eave trim since the overlapping is opposite what it should be, that way water runs over the underlayment? Like, installing underlayment starts at
The lowest side of the pitch and you work up, that way water runs down over the existing underlayment, then at the end, now there would be underlayment running over what was there….

Also, do you have to use narrow eave flashing with gutters, or can you use wide eave flashing?

If you were to add gutters to that roof, would you tuck the gutters underneath (or behind) the eave trim? Or, would you install the gutters in front of the eave trim? Seems like the latter would defeat the entire purpose of the kick out on the eave trim aka drip edge,
