The idea is simple

Here is a classic recipe for lasagna bolognese:

Ingredients

For the bolognese sauce:
- 500 g ground beef
- 1 onion
- 2 cloves garlic
- 1 carrot
- 1 stick celery
- 800 g crushed tomatoes (or tomato sauce)
- 2 tablespoons tomato paste
- 1 glass red wine (optional)
- 2 tablespoons olive oil
- 1 bay leaf
- Salt, pepper
- Herbs de Provence or basil (optional)

For the béchamel sauce:
- 50 g butter
- 50 g flour
- 500 ml milk
- Salt, pepper
- Nutmeg (optional)

For the lasagna:
- 12 lasagna sheets
- 100 g grated parmesan
- 200 g grated mozzarella (optional)

Preparation

The Bolognese sauce:
1. Finely chop the onion, garlic, carrot and celery.
2. Heat the olive oil in a large frying pan or casserole dish.
3. Add the onion, garlic, carrot and celery. Sauté until tender.
4. Add the ground beef and cook until golden brown.
5. Pour in the red wine and reduce.
6. Add the crushed tomatoes, tomato puree, bay leaf, salt, pepper and herbes de Provence or basil.
7. Simmer over low heat for about 45 minutes, stirring occasionally.

The béchamel sauce:
1. Melt the butter in a saucepan.
2. Add the flour and mix well to obtain a roux.
3. Pour in the milk little by little, stirring constantly to avoid lumps.
4. Cook over medium heat until the sauce thickens.
5. Season with salt, pepper and a little nutmeg.

Assembling the lasagne:
1. Preheat the oven to 180°C (thermostat 6).
2. In a gratin dish, spread a layer of Bolognese sauce.
3. Cover with lasagne sheets.
4. Add a layer of béchamel and sprinkle with grated parmesan.
5. Repeat the operation, alternating Bolognese sauce, lasagne sheets, béchamel and parmesan, until all the ingredients are used up. Finish with a layer of béchamel and parmesan.
6. Sprinkle with grated mozzarella (optional).
7. Bake for about 30-40 minutes, until the top is golden and crispy.
8. Let rest for 5-10 minutes before serving.
