Italian Sausage Gnocchi Soup

Today I’m making Italian sausage gnocchi soup! The soup has delicious veggies and gnocchi / potato dumplings and Italian sausage all in a delicious creamy base serve it up with some garlic crusty bread and you have a delicious Italian sausage gnocchi soup a delicious meal and i hope y’all enjoy!

Italian sausage gnocchi soup

Few teaspoons cooking oil of choice
1 pound Italian sausage
1 cup chopped onions
2/3 cups sliced carrots
2 celery ribs sliced
1 tablespoon chopped garlic
1/2 teaspoon black pepper
1/2 teaspoon dried thyme
4 slices cooked chopped bacon
5 cups chicken broth i used 5 cups water with 4 teaspoons knorr chicken bouillon powder
1 16 to 17oz package potato gnocchi
4 oz baby spinach or much as you like
2 cups heavy cream
1/2 cup shredded parmesan cheese | more for topping in bowls
