Some cameras like The c-100 have an rgb mode that will display the waveform of the three color Channels, making it easy to dial in the kelvin number

I have taken a food shot which is bright but when transferred to mobile phone turns out darker; now I know have to adjust WB

When setting custom white balance on Canon cameras, will it use the center of the image or the whole image to determine the correct color? I've seen photographers fill up the whole frame with a grey card while others do not. Is it better to fill up the entire frame with a grey card or will it not matter?

I have a 70d and i am pretty new this stuff. Can some one help me with this .while setting up the custom white balance i cant get the grey card entirely in focus and if i get it i cant fill the whole screen (when i use prime lenses). so if i zoom the img till the get the grey card filling my screen entirely, is that good enough?
