I saw someone with pre-diabetes, tried a huge bowl of Ash e reshte, and even though it is filled with Carbs, there was no glucose spike on the glucose monitor. That was really interesting. the combination of beans and veges has balanced out the carbs and created a perfect meal.

I am a carer to a nice Iranian lady, I tried Persian food because of her and this soup is so good! She used to love it too but has unfortunately become unable to eat these past two years 😢 I am really thankful to her for lots of reasons, and introducing me to this amazing cuisine is definitely one of them!

As a Persian I think it's so cool that you're an afghan Influencer! At the end of the day Afghanistan, Persia, Uzbekistan, Turkmenistan, Armenia, Georgia, Azabaijan and even parts of Iraq for almost 2000 years were one country, so even though people try to split us up, no one can deny that at the end of the day our cultures are so similar in character! ❤

I am a Bengali. I got introduced to aush by my Persian husband and Afghan friends. Some people prefer to cook the greens longer. I don't. My father-in-law also prefered that way. I aboslutely love how you kept the colour of the greens. Looks so yumm!

Wow! I’m Palestinian and we make a very similar version of this with lentils onions and noodles called Rashta. So interesting how the names are close too

I’m lebanese and my mom makes a version of this soup and we call it rashta baadas (lentil rashta). So cool to know the origin!
