25 Days of Christmas: Day 4
The Christmas Goose!

Ingredients:
- 1 Goose
- Salt (to taste)
- 5g Ground Clove
- 5g Ground Cinnamon
- 5g 5 Spice
- 5g Ground Ginger
- 100ml Honey
- Rosemary & thyme (as garnish)

Method:
- Remove the wing, and wishbone from the goose using a boning knife. Then score the skin creating “tiger stripes” across each breast.
- Rub a generous amount of salt around the whole bird, before placing on a lined roasting tray and placing in a pre-heated oven at 220°c for 25mins until golden brown the turn the oven down to 100ºc for 10mins.
- In a bowl, mix together the honey and all the spices to a thick paste and set aside.
- Remove the goose from the oven and brush with a generous helping for spiced glaze before leaving to rest for 20mins until it reaches 58ºc. Glaze once more, then carve, and enjoy!
