I often put herbs inside my omelette, but it’s never occurred to me to put an herb sauce on top. That must bring a punch of fresh flavors to the plate!

I cooked this this morning using some leftover aged white cheddar cheese. LIKE WOW! I also cooked some sliced potatoes topped with shredded manchego. Coffee and a mimosa using a Spanish cava topped this breakfast off to a new level.
