as a vietnamese, I recommend you to blend egg yolks with brown sugar first, add a bit of gold rhum or cognac to clean out the smell, then after the egg is fluffy, add a bit of condense milk and blend for 20sec to mix. In the end, you have the creamy, silky texture

I had this in Vietnam several times and it was incredible.

The beans had been already digested by a weasel apparently which was a bit weird but still delicious!

This reminds me of such a lovely memory from when I visited Italy and tried Uovo Sbattuto for the first time. The drink was so rich and decadent and had a really enjoyable conversation with the owner of this small cafe. The main differences being that he used espresso and sugar instead of condensed milk. You videos are so wonderful, thank you.

My mother gave us this in the morning before we went to school, she always said it strengthens you. Each kid got an egg yolk and sugar whipped until it was fluffy and then the espresso in, Ioved it👍🏻

I used to have this all the time but I lost my coffee maker 😢. I definitely didn’t use soo many egg yolks. Just one was enough😅. It looks delicious and you can use those extra egg whites for fluffier pancakes !
Still waiting on the Cantonese family style dinner for Heun Wah please chef!

Vietnamese here.
Just two egg yolks and the same amount of condensed milk is enough, you dont waste any thing (you can not reserve the remain in frize).
And yes, this is sweet but we dont live on it like fast food and soft drink so diabetes is not a problem in Vietnam.

If you're making an iced coffee, you can mix the egg mixture in a double boiler so you can pasteurize the egg: it won't scramble and will remain velvety and creamy❤

Egg coffee is Fantastic. It originated in Hanoi and the version there is better, its thicker and served with a candle under it to keep the coffee under the egg mix hot as you sip it.

Also great when its served with chha Kvai(a type of fried batter) for dipping 😊
