Vegan Spelt Peanut Butter Muffin #Shorts

These healthy wholemeal muffins are the perfect treat for midday snacking, to take to work, after a workout or whenever you choose! Recipe below:

240g Spelt Flour
75g Oats
4 tbs. Sugar
1 tsp. Vanilla
1 tsp. Cinnamon
1/2 cup of coconut oil
1 tbsp Chia Seeds, mixed with 2 tbsp water
1 1/2 tsp Baking Powder
4 tbs Peanut Butter
2 ripe bananas
Pinch of salt

Mash bananas with coconut oil into a bowl. Combine with sugar, peanut butter and vanilla. Sift spelt flour, oats, baking powder, cinnamon, salt and chia seed mix into another bowl and combine with wet ingredients. Scoop mixture into muffin cups (top with seeds) and bake at 180 degrees for 20 minutes. These taste delicious!
