my mom made a tomato bread pudding (type) dish in the 60's and 70's....I looked and looked for a recipe but never found it!....so I made my torn up yeast rolls, canned and brown delicious!

I did mine by mixing 1 egg with the cream/half & half along with a dollop of wet chicken base and I added a little Italian seasoning to it as well. I did my bread the same way only I poured the liquid on the first layer of bread and put the fire roasted tomatoes with garlic on the first layer and on the top. Then I added shredded Asiago cheese on top at the last 5 min! (I poured the liquid on the top as well). Next time I think I am going to add the egg plant along with crumbled par cooked Italian sausage.

So is the bread soggy or dry? It sounds good. All that cheese…..yum!

To make this recipe my own, I would cut the saturated fat and add chopped spinach or kale. 1) Substitute low fat ricotta cheese for the full fat cream cheese; 2) instead of buttering all the bread, I would use either avocado or olive oil; 3) Substitute with low fat mozzarella cheese 4) Add a cup of cooked kale or spinach or caramelized onions 5) Use olive/avocado oil with the panko topping or just use plain panko 6) Add basil or oregano for herbs, and/or nutmeg to the ricotta 7) Use 1% or 2% milk instead of heavy cream or whipping cream....I've made this a few times and it's a hit in my house. It cuts the saturated fat using good oils, the ricotta adds higher protein than cream cheese, and the kale/spinach adds vitamins and minerals too.
