The coil around the magnet poles are the actual pickup. The magnet poles are there to magnetise the strings so the coil can pickup the strings movement.

Ok so how is that flow of electrons different for higher and lower pitched notes? And what about if high and low notes are played together as in a chord?

I'm guessing that the volume of a note translates to the amount of electrons flowing (larger/ smaller current).
