Introduction to Hyperledger Sawtooth

Designed for versatility and scalability, Hyperledger Sawtooth is a modular blockchain suite. Hyperledger Sawtooth supports both permissioned and permissionless deployments. It includes a novel consensus algorithm, Proof of Elapsed Time (PoET). PoET targets large distributed validator populations with minimal resource consumption. Transaction business logic is decoupled from the consensus layer into Transaction Families that allow for restricted or unfettered semantics.

You're just describing a blockchain in general. In this case, how would I tell Sawtooth from Fiber apart then? Really uninformative

I wonder how much each sensor would cost? What would power them? What is the smallest sensor available? The sensor must be easy to attach and detach to make it re-usable.

What if the fisherman keeps the fish cold in some wrong way that makes them harmful to eat? How can we have trustless, immutable, uncheatable sensors?

Sounds cool but he still has to trust that the fishermen will actually tag the fish correctly.

They're out on the open sea - mistakes happen. Agendas and opinions change based on profits and losses and there's no real way to know for sure if the fishermen even tag some of the fish. Some have figured out they're just gonna move the sensors around where once they figure out how to fool the system. It's hard to really trust a system as vulnerable as that one.

Something fishy is going on here.

Let say I want to use Sawtooth for my supply chain. Does each network participant to install hyperledger sawtooth on his computer?

In order to avoid cheating, the sensor should read and transmit the fish's DNA at fishing time, then the end customer would be able to really check that the audit trail refers to that specific fish

So each fish will be tagged with IoT devices. The company will need to check if it can take the cost of implementation.

Well.. this use case has too many loopholes. And, this can be achieved with any technology why does it have to be a blockchain network? I feel like Blockchain is a technology that is invented without a need.
