I learned how to do this from Sonya Isaacs Yeary. I was at their house because I was appearing on Jimmy Yeary's show, Yeary's Chapel. Sweet Sonya had this going in the crock pot and I had to get the recipe.

Thanks for sharing! I totally laughed out loud when you mentioned about 3X having the onions as a base and even went through the motions to show us how to form a little platform - I was totally onboard and thinking what a really neat idea, why didn't I think of that?!? and then you just stirred it all in anyway. 🙂 LOL - love it and it does look positively delish. Thanks for always sharing a smile!

When you sear the meat first it allows it to hold in the juices while it cooks. I put onions under mine too! I'm gonna have to try those peppers they look delicious. I put potatoes and carrots in mine and use Beefy Onion Soup Mix and Beef Broth instead of water to cook it in. I also rub mine with mustard and black pepper then roll it lightly in flour. I don't use salt because there is plenty of sodium in the Beefy Onion Soup Mix. I use a tablespoon of Extra Virgin Olive Oil to brown it with before I put it in the crock pot. The flour, over the cooking process, thickens into a brown gravy. It all looked really good. Sad to say, seeing that I lived in the south my whole life, that I've never had purple hull peas. They look delicious, I might have to try some. There a sweet lady at our church that now how to cook them. I'll ask her for her recipe. If I have any leftover taters and carrots I mix them with flour and peanut butter and bake them for treats for my brother's dogs Dixie and Brownie. They love it!

Hi Mark, Looking good.
Searing the Roast seals the juices inside. When it's done take it out of the crockpot tent it w foil. Let it sit about 10 minutes before cutting. Letting it Rest redistributes the juice through out the Roast. Blessings 🌺

Mark you should try the Crock Pot liners, you will love them..Clean up is a breeze..
