Onion & Garlic Marinade (Base Recipe)

1.5 lbs eye of round beef
1/2 large onion grated
4 garlic cloves grated
1.5 tbsp Maggi sauce (can substitute soy)
2 tsp sugar
1/2 tbsp chicken bouillon powder
1 tbsp sesame oil

Mix all the ingredients together and marinate the beef for at least 1 hour.

For air frying the beef skewers to medium rare:

* Temperature: 390°F (200°C)
* Time: 6-8 minutes, turning halfway through.

Adjust time based on your air fryer model or skewer size.

The onion juice in the marinade contains enzymes like alliinase and protease, which help break down the proteins in the beef, making it more tender. These enzymes work by degrading collagen, the connective tissue in meat, which reduces toughness.
