Easy Scallion Pancake Recipe

Sourdough scallion pancake

250g Sourdough

1 handful scallions
Chopped chives
Chopped parsley
Chopped dill
Pinch of salt and pepper

Grated cheese

Flour oil mixture
2 Tbs Oil
1 Tbs sesame seed oil
1 Tbs Flour

In one pan sautee chopped scallions, chives, basil, salt, pepper, parsey and dill until soft.

In a pan add a 1/8 C vegetable oil and 1 Tbs flour and bring it to boil and let it boil for a minute.

Take the sourdough and place it on a floured surface. Stretch it out until its about 30 cm long.

Roll it out into a long rectangle until flat.

Brush the dough with the oil flour mixture lightly so it's all coated.

Add the chopped sauteed scallions, grated pecorino and grated cheddar on the dough.

Slowly roll the roll with the mixture until you hand a long thick snake like dough shape.

Slowly curl the dough in the middle until it's a complete spiral.

Gently roll it flattish as much as you can until it looks like a thick pancake.

Distribute it to a medium heat pan with a generous amount of canola oil and let it cook for around 2 minutes and 30 seconds each side.

It should be golden brown on top, bottom and sides.

Take out on a paper towel to absorb the oil an enjoy.

Dont think the dough is fully cooked, youre probably better off baking this in an oven
